When all the talk is done, when chins have been stroked and teeth sucked, the proof of the pudding is when the end result is placed delicately in your gob. The finest buffalo mozzarella, delicate olive oil made by some wizened inbred peasant from Liguria, fresh basil from the herb garden and undoubtedly the finest tomatoes on God's green earth. I thank you.

One word...yum!
Apart from the fact that it is really pretty, I have a technical question: do you deseed your toms before serving?
Drool.
What a silly question, Mr Affer. All Toms need to be de-seeded. They have no control over their actions, and if they are not de-seeded, the world becomes full of unwanted kittens.
ron - you've really done it now - i'm wondering if i can get there in time in Diplo Jnr's land Rover. I feel an expedition coming on - and thank you.
I don't de-seed but Mrs Combo does. Each to his, or her, own I suppose.
Diplo: the tomatoes are ready and waiting, as is the wine cellar.
OT - other Barbera (Asti) producers in my local wine shop; Vietti, Cascina La Ghersa and Hastae.
Needs some sausage to make it good!
